Baked Lemon Almond Loaves
Ingredients
- 1 lb almonds, finely ground
- ¾ lb sifted sugar
- 1 lemon, grated rind
- Egg whites, beaten to stiff peaks
- Additional sifted sugar for coating
Method
- 1 Grind almonds finely and mix with ¾ lb sifted sugar.
- 2 Cook the mixture over heat, stirring constantly until stiff.
- 3 Stir in the grated lemon rind.
- 4 Shape the mixture into small loaves.
- 5 Roll the loaves in beaten egg whites until coated.
- 6 Place loaves in a pan with 1 lb sifted sugar and shake until evenly coated and smooth.
- 7 Dip a baking pan in egg white, place loaves on parchment or tin plates, and bake like biscuits.
