Baked Lemon Almond Loaves

Ingredients

  • 1 lb almonds, finely ground
  • ¾ lb sifted sugar
  • 1 lemon, grated rind
  • Egg whites, beaten to stiff peaks
  • Additional sifted sugar for coating

Method

  1. 1 Grind almonds finely and mix with ¾ lb sifted sugar.
  2. 2 Cook the mixture over heat, stirring constantly until stiff.
  3. 3 Stir in the grated lemon rind.
  4. 4 Shape the mixture into small loaves.
  5. 5 Roll the loaves in beaten egg whites until coated.
  6. 6 Place loaves in a pan with 1 lb sifted sugar and shake until evenly coated and smooth.
  7. 7 Dip a baking pan in egg white, place loaves on parchment or tin plates, and bake like biscuits.
