Baked Lamb Neck With Lima Beans
Ingredients
- 1 pint lima beans
- 1/2 cup diced onions
- 1 pound lamb neck, cut into cutlets
- 1 cup canned tomatoes
- Salt and pepper to taste
- Boiling water
Method
- 1 Soak lima beans overnight. Drain, rinse carefully, and parboil briefly.
- 2 Place parboiled beans, diced onions, lamb cutlets, and canned tomatoes in a baking dish.
- 3 Season with salt and pepper. Add enough boiling water to cover all ingredients.
- 4 Bake in a moderate oven (350°F) for 3 hours until tender.
