Baked Lamb And Rice Stuffed Peppers
Ingredients
- 1 cup leftover roast lamb, minced
- 1 cup boiled rice
- 1 cup canned tomatoes
- 3 onions, chopped fine
- 1 tbsp salt
- 1 tsp paprika
- 4 green peppers, prepared
- 1 cup boiling water
- cheese sauce, for serving
Method
- 1 Mince the leftover lamb finely. In a saucepan, add the lamb and just enough boiling water to cover. Cook slowly until tender, then thicken the gravy.
- 2 In a large bowl, combine the cooked lamb mixture, 1 cup boiled rice, 1 cup canned tomatoes, 3 chopped onions, 1 tbsp salt, and 1 tsp paprika. Mix well.
- 3 Stuff the prepared green peppers with the lamb and rice mixture. Place them in a baking pan.
- 4 Pour 1 cup of boiling water into the bottom of the pan. Bake in a moderate oven (350°F) for 35 minutes. Serve with cheese sauce.
