Baked Kidney Beans With Bacon
Ingredients
- 1 quart kidney beans
- 0.5 lb bacon
- 1 onion, chopped
- Salt to taste
- Red pepper to taste
Method
- 1 Soak kidney beans overnight, then cook in boiling salted water until tender. Drain.
- 2 Boil bacon until tender, remove skin, and slice or chop.
- 3 Layer beans, bacon, and chopped onion in a baking dish.
- 4 Season with salt and red pepper, then fill dish with cold water.
- 5 Bake at 300°F until liquid is nearly absorbed.
