Baked Kidney Bean Casserole
Ingredients
- 2 cups kidney beans, soaked overnight
- 2 tablespoons fat
- 1 tablespoon chopped onion
- 1 cup tomato pulp
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups breadcrumbs
- 2 tablespoons melted fat
Method
- 1 Soak kidney beans overnight, then cook until tender and drain.
- 2 In a bowl, mix the drained beans with 2 tablespoons fat, chopped onion, tomato pulp, salt, and pepper.
- 3 Transfer the mixture to a greased baking dish.
- 4 Combine breadcrumbs with 2 tablespoons melted fat and sprinkle evenly over the top.
- 5 Bake in a moderate oven (350°F) for 30 minutes.
