Baked Hominy Cornmeal Cake
Ingredients
- 1 cup boiled hominy
- 1 tsp butter
- 1/8 tsp salt
- 2 egg yolks, well beaten
- 1 cup milk
- 1/2 cup fine cornmeal
- 2 egg whites, whipped
Method
- 1 Stir butter, salt, and beaten egg yolks into hot boiled hominy.
- 2 Slowly add milk, then mix in fine cornmeal.
- 3 Fold in whipped egg whites.
- 4 Bake in a flat tin at 425°F for 20 to 30 minutes.
