Baked Hominy Cornmeal Cake

Ingredients

  • 1 cup boiled hominy
  • 1 tsp butter
  • 1/8 tsp salt
  • 2 egg yolks, well beaten
  • 1 cup milk
  • 1/2 cup fine cornmeal
  • 2 egg whites, whipped

Method

  1. 1 Stir butter, salt, and beaten egg yolks into hot boiled hominy.
  2. 2 Slowly add milk, then mix in fine cornmeal.
  3. 3 Fold in whipped egg whites.
  4. 4 Bake in a flat tin at 425°F for 20 to 30 minutes.
