Baked Hominy Cornbread

Ingredients

  • 3 cups cooked hominy
  • 2 tablespoons melted Crisco
  • 1 1/2 cups cornmeal
  • 2 eggs
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 2 cups milk

Method

  1. 1 Beat eggs, then add milk and cooked hominy.
  2. 2 Sift in cornmeal, then add baking powder and salt.
  3. 3 Add melted Crisco and beat all ingredients together for three minutes.
  4. 4 Pour into a greased deep pan and bake in a slow oven (300°F) for one hour.
  5. 5 Serve hot.
