Baked Hominy Cornbread
Ingredients
- 3 cups cooked hominy
- 2 tablespoons melted Crisco
- 1 1/2 cups cornmeal
- 2 eggs
- 1 teaspoon salt
- 2 teaspoons baking powder
- 2 cups milk
Method
- 1 Beat eggs, then add milk and cooked hominy.
- 2 Sift in cornmeal, then add baking powder and salt.
- 3 Add melted Crisco and beat all ingredients together for three minutes.
- 4 Pour into a greased deep pan and bake in a slow oven (300°F) for one hour.
- 5 Serve hot.
