Baked Herring Rolls With Bread Crumbs

Ingredients

  • few herrings
  • browned bread crumbs
  • butter or dripping
  • parsley

Method

  1. 1 Split open the herrings and remove the back-bone.
  2. 2 Roll them up and place them with their roes on a greased baking sheet.
  3. 3 Cover with greased paper and bake in a moderate oven (350°F) for 10-15 minutes until cooked.
  4. 4 Place the rolls on a folded napkin and sprinkle brown bread crumbs in a straight line on each.
  5. 5 Garnish with the roes and sprigs of parsley.
