Baked Ham With Sherry And Breadcrumbs

Ingredients

  • 1 small lean ham
  • 1 onion
  • 4 sprigs parsley
  • 6 whole cloves
  • 6 peppercorns
  • Breadcrumbs
  • Sugar
  • 1 pint sherry

Method

  1. 1 Soak ham in cold water for 6 hours. Place in a saucepan, cover with cold water, and add onion, parsley, cloves, and peppercorns.
  2. 2 Boil slowly for 2 hours. Let cool in the water, then remove, skin, and pat dry.
  3. 3 Sprinkle the ham thickly with breadcrumbs and sugar. Place in a roasting pan and pour sherry over it.
  4. 4 Bake at 350°F for 40 minutes, basting every 10 minutes. Serve hot with gravy or cold.
