Ingredients

  • 2 cups cooked hominy
  • 1 cup chopped cooked ham
  • 1/3 cup fat
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/8 teaspoon mustard
  • 1/8 teaspoon cayenne
  • 1 egg
  • 1 cup milk
  • ½ cup water

Method

  1. 1 Melt the fat in a saucepan.
  2. 2 Add flour, salt, mustard, and cayenne; stir to combine.
  3. 3 Slowly whisk in milk and water until smooth.
