Baked Halibut With Walnut Catsup Sauce
Ingredients
- 6 lbs halibut
- Salt water (for soaking)
- Melted butter
- Hot water (for basting)
- Boiling water
- 1 tbsp walnut catsup
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Juice of 1 lemon
- Browned flour
- Cold water (to mix with flour)
Method
- 1 Soak halibut in salt water for 2 hours. Wipe dry and score the outer skin.
- 2 Bake in a moderately hot oven (375°F) for 1 hour, basting occasionally with melted butter and hot water.
- 3 Remove fish. Add boiling water to pan drippings, walnut catsup, Worcestershire sauce, salt, pepper, and lemon juice.
- 4 Stir in browned flour mixed with a little cold water to thicken. Cook briefly while stirring until sauce is smooth.
