Baked Halibut With Walnut Catsup Sauce

Ingredients

  • 6 lbs halibut
  • Salt water (for soaking)
  • Melted butter
  • Hot water (for basting)
  • Boiling water
  • 1 tbsp walnut catsup
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Browned flour
  • Cold water (to mix with flour)

Method

  1. 1 Soak halibut in salt water for 2 hours. Wipe dry and score the outer skin.
  2. 2 Bake in a moderately hot oven (375°F) for 1 hour, basting occasionally with melted butter and hot water.
  3. 3 Remove fish. Add boiling water to pan drippings, walnut catsup, Worcestershire sauce, salt, pepper, and lemon juice.
  4. 4 Stir in browned flour mixed with a little cold water to thicken. Cook briefly while stirring until sauce is smooth.
