Baked Halibut With Tomatoes And Peppers

Ingredients

  • 2-3 slices onion
  • 1 halibut cutlet
  • 1 tbsp butter, cut into small bits
  • 3 tomatoes, skinned and quartered
  • 1 sweet green pepper, sliced into ribbons

Method

  1. 1 Place onion slices on the bottom of a baking pan.
  2. 2 Place the halibut cutlet on top of the onions and dot with butter bits.
  3. 3 Arrange the tomato quarters and green pepper ribbons over the fish.
  4. 4 Cook in the upper oven shelf briefly to warm vegetables without discoloring them.
  5. 5 Move pan to the bottom of the oven, baste well, and finish cooking.
  6. 6 Transfer to a hot dish and pour the pan juices over the fish before serving.
