Baked Halibut With Tomatoes And Peppers
Ingredients
- 2-3 slices onion
- 1 halibut cutlet
- 1 tbsp butter, cut into small bits
- 3 tomatoes, skinned and quartered
- 1 sweet green pepper, sliced into ribbons
Method
- 1 Place onion slices on the bottom of a baking pan.
- 2 Place the halibut cutlet on top of the onions and dot with butter bits.
- 3 Arrange the tomato quarters and green pepper ribbons over the fish.
- 4 Cook in the upper oven shelf briefly to warm vegetables without discoloring them.
- 5 Move pan to the bottom of the oven, baste well, and finish cooking.
- 6 Transfer to a hot dish and pour the pan juices over the fish before serving.
