Baked Halibut With Garden Vegetables

Ingredients

  • halibut steaks
  • salt and water
  • melted butter
  • chopped onion
  • 1 boiled carrot, diced
  • 6 sliced tomatoes
  • 1 shredded green pepper
  • 1/2 cup green peas
  • salted boiling water
  • 1 tablespoon butter
  • 3 tablespoons white wine
  • 1 teaspoon butter
  • browned flour

Method

  1. 1 Soak halibut steaks in salt water for one hour. Wipe dry and rub with melted butter.
  2. 2 Butter a baking dish. Sprinkle chopped onion on the bottom, then place steaks on top.
  3. 3 Top steaks with diced carrot, sliced tomatoes, shredded green pepper, and green peas.
  4. 4 Add enough salted boiling water to prevent scorching. Dot with 1 tablespoon butter, cover, and bake at 350°F until done.
  5. 5 Carefully drain liquid from the pan. Stir in white wine and thicken with butter rolled in browned flour. Serve as sauce.
