Baked Halibut With Garden Vegetables
Ingredients
- halibut steaks
- salt and water
- melted butter
- chopped onion
- 1 boiled carrot, diced
- 6 sliced tomatoes
- 1 shredded green pepper
- 1/2 cup green peas
- salted boiling water
- 1 tablespoon butter
- 3 tablespoons white wine
- 1 teaspoon butter
- browned flour
Method
- 1 Soak halibut steaks in salt water for one hour. Wipe dry and rub with melted butter.
- 2 Butter a baking dish. Sprinkle chopped onion on the bottom, then place steaks on top.
- 3 Top steaks with diced carrot, sliced tomatoes, shredded green pepper, and green peas.
- 4 Add enough salted boiling water to prevent scorching. Dot with 1 tablespoon butter, cover, and bake at 350°F until done.
- 5 Carefully drain liquid from the pan. Stir in white wine and thicken with butter rolled in browned flour. Serve as sauce.
