Baked Halibut With Cream Sauce
Ingredients
- 1 onion, chopped
- 1 cup water
- 1 sprig mace
- 1 tablespoon parsley, chopped
- 1 cup cream or milk
- 1 tablespoon butter
- 1 tablespoon flour
- Cold cooked halibut, deboned and flaked
- Butter for greasing dish
- Breadcrumbs for topping
Method
- 1 Place chopped onion, water, mace, and parsley in a saucepan. Boil thoroughly.
- 2 Stir in cream (or milk), butter, and flour. Strain the mixture through a sieve into a bowl.
- 3 Butter a baking dish. Layer flaked halibut and the strained sauce alternately until the dish is full.
- 4 Top with breadcrumbs and bake in a moderate oven (350°F) for 30 minutes.
