Baked Halibut With Cream Sauce

Ingredients

  • 1 onion, chopped
  • 1 cup water
  • 1 sprig mace
  • 1 tablespoon parsley, chopped
  • 1 cup cream or milk
  • 1 tablespoon butter
  • 1 tablespoon flour
  • Cold cooked halibut, deboned and flaked
  • Butter for greasing dish
  • Breadcrumbs for topping

Method

  1. 1 Place chopped onion, water, mace, and parsley in a saucepan. Boil thoroughly.
  2. 2 Stir in cream (or milk), butter, and flour. Strain the mixture through a sieve into a bowl.
  3. 3 Butter a baking dish. Layer flaked halibut and the strained sauce alternately until the dish is full.
  4. 4 Top with breadcrumbs and bake in a moderate oven (350°F) for 30 minutes.
