Baked Halibut Soufflé

Ingredients

  • 1/2 pound uncooked halibut
  • 1 cup white bread crumbs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • dash of paprika
  • 5 egg whites, whipped
  • butter for greasing molds

Method

  1. 1 Cut halibut into fine pieces, pound in a mortar, and pass through a sieve to create a smooth pulp.
  2. 2 Mix bread crumbs with milk to form a smooth paste. Remove from heat and stir in fish pulp, salt, and paprika.
  3. 3 Lightly beat in the whipped egg whites, adding them a little at a time.
  4. 4 Fill buttered timbale molds with the mixture and place in a pan of hot water.
  5. 5 Bake in a moderate oven (350°F) for 20 minutes. Serve with white or tomato sauce.
