Baked Halibut Soufflé
Ingredients
- 1/2 pound uncooked halibut
- 1 cup white bread crumbs
- 1/2 cup milk
- 1/2 teaspoon salt
- dash of paprika
- 5 egg whites, whipped
- butter for greasing molds
Method
- 1 Cut halibut into fine pieces, pound in a mortar, and pass through a sieve to create a smooth pulp.
- 2 Mix bread crumbs with milk to form a smooth paste. Remove from heat and stir in fish pulp, salt, and paprika.
- 3 Lightly beat in the whipped egg whites, adding them a little at a time.
- 4 Fill buttered timbale molds with the mixture and place in a pan of hot water.
- 5 Bake in a moderate oven (350°F) for 20 minutes. Serve with white or tomato sauce.
