Baked Haddock With Cheese And Sherry
Ingredients
- haddock fillets, cut into 1-inch thick slices
- salt and pepper
- cheese, grated
- red pepper
- mustard
- cream or beaten egg
- sherry
Method
- 1 Cut haddock into 1-inch thick slices and remove bone and skin.
- 2 Place slices in a greased baking dish and season with salt and pepper.
- 3 Grate enough cheese to cover the fish and mix with salt, red pepper, mustard, and enough cream or beaten egg to form a smooth paste.
- 4 Spread the cheese mixture over the fish and bake in a hot oven (425°F) until the cheese melts and browns and the fish is firm.
- 5 Transfer to a platter and pour one tablespoon of sherry over each slice before serving.
