Baked Haddock With Cheese And Sherry

  • haddock fillets, cut into 1-inch thick slices
  • salt and pepper
  • cheese, grated
  • red pepper
  • mustard
  • cream or beaten egg
  • sherry

Method

  1. 1 Cut haddock into 1-inch thick slices and remove bone and skin.
  2. 2 Place slices in a greased baking dish and season with salt and pepper.
  3. 3 Grate enough cheese to cover the fish and mix with salt, red pepper, mustard, and enough cream or beaten egg to form a smooth paste.
  4. 4 Spread the cheese mixture over the fish and bake in a hot oven (425°F) until the cheese melts and browns and the fish is firm.
  5. 5 Transfer to a platter and pour one tablespoon of sherry over each slice before serving.
