Baked Haddock And Cheese Casserole
Ingredients
- 1 haddock
- 1 pint milk
- 1 egg-sized piece butter
- ½ cup flour
- 2 egg yolks
- ½ cup bread crumbs
- ½ cup grated cheese
- Salt and pepper to taste
Method
- 1 Boil the haddock, then flake the best parts of the fish.
- 2 In a saucepan, combine milk, butter, flour, and egg yolks. Stir over heat until thickened.
- 3 Fold the flaked fish into the sauce. Season with salt and pepper.
- 4 Transfer mixture to a pudding dish. Top with bread crumbs and grated cheese.
- 5 Bake in a moderate oven (350°F) for 10 minutes until golden.
