  • 1 pint milk
  • 1 egg-sized piece butter
  • ½ cup flour
  • 2 egg yolks
  • ½ cup bread crumbs
  • ½ cup grated cheese
  • Salt and pepper to taste

Method

  1. 1 Boil the haddock, then flake the best parts of the fish.
  2. 2 In a saucepan, combine milk, butter, flour, and egg yolks. Stir over heat until thickened.
  3. 3 Fold the flaked fish into the sauce. Season with salt and pepper.
  4. 4 Transfer mixture to a pudding dish. Top with bread crumbs and grated cheese.
