Baked Gruyere Potato Souffles

Ingredients

  • 6 large potatoes
  • 3 tablespoons grated Gruyere cheese
  • Salt and pepper to taste
  • 6 egg whites
  • 3 egg yolks
  • Butter for pan

Method

  1. 1 Preheat oven to 425°F. Wash potatoes and bake until tender, about 45 minutes.
  2. 2 Cut potatoes open and scoop the flesh into a heated bowl. Mash until smooth.
  3. 3 Stir in grated Gruyere cheese, salt, and pepper. Beat in stiffly whipped egg whites until combined.
  4. 4 Transfer mixture to a pastry bag. Pipe onto a buttered baking sheet in small mounds.
  5. 5 Brush tops with beaten egg yolk. Bake in a 425°F oven until golden brown.
