Baked Gruyere Potato Souffles
Ingredients
- 6 large potatoes
- 3 tablespoons grated Gruyere cheese
- Salt and pepper to taste
- 6 egg whites
- 3 egg yolks
- Butter for pan
Method
- 1 Preheat oven to 425°F. Wash potatoes and bake until tender, about 45 minutes.
- 2 Cut potatoes open and scoop the flesh into a heated bowl. Mash until smooth.
- 3 Stir in grated Gruyere cheese, salt, and pepper. Beat in stiffly whipped egg whites until combined.
- 4 Transfer mixture to a pastry bag. Pipe onto a buttered baking sheet in small mounds.
- 5 Brush tops with beaten egg yolk. Bake in a 425°F oven until golden brown.
