Baked Ground Rice Pudding With Allspice
Ingredients
- 8 oz ground rice
- 3 pints skim milk
- 1 oz butter
- 4 oz sugar
- 1 pinch allspice or bit of lemon peel
- 1 pinch salt
- 2-3 eggs
Method
- 1 In a saucepan, combine ground rice, milk, butter, sugar, allspice (or lemon peel), and salt. Stir over heat until the mixture boils.
- 2 Beat eggs in a separate bowl, then whisk them into the hot rice batter until well combined.
- 3 Pour the mixture into a well-greased pie dish and bake for one hour.
