Baked Ground Rice Pudding With Allspice

  • 8 oz ground rice
  • 3 pints skim milk
  • 1 oz butter
  • 4 oz sugar
  • 1 pinch allspice or bit of lemon peel
  • 1 pinch salt
  • 2-3 eggs

Method

  1. 1 In a saucepan, combine ground rice, milk, butter, sugar, allspice (or lemon peel), and salt. Stir over heat until the mixture boils.
  2. 2 Beat eggs in a separate bowl, then whisk them into the hot rice batter until well combined.
  3. 3 Pour the mixture into a well-greased pie dish and bake for one hour.
