Baked Green Tea Custards

Ingredients

  • 1 quart cream or rich milk
  • 3 ounces green tea
  • 2 ounces loaf sugar
  • 8 eggs, separated (use yolks only)
  • Sugar for garnish

Method

  1. 1 Boil the cream or milk. Pour it over the green tea, cover, and let steep until cold.
  2. 2 Beat the egg yolks with the sugar until well combined.
  3. 3 Strain the cooled tea mixture into the egg yolks and whisk to combine.
  4. 4 Pour the mixture into cups placed in a baking dish with hot water. Bake in a moderate oven (350°F) until set.
  5. 5 Grate sugar over the top of each custard before serving.
