Baked Green Tea Custards
Ingredients
- 1 quart cream or rich milk
- 3 ounces green tea
- 2 ounces loaf sugar
- 8 eggs, separated (use yolks only)
- Sugar for garnish
Method
- 1 Boil the cream or milk. Pour it over the green tea, cover, and let steep until cold.
- 2 Beat the egg yolks with the sugar until well combined.
- 3 Strain the cooled tea mixture into the egg yolks and whisk to combine.
- 4 Pour the mixture into cups placed in a baking dish with hot water. Bake in a moderate oven (350°F) until set.
- 5 Grate sugar over the top of each custard before serving.
