Baked Garlic Parsley Tomatoes

Ingredients

  • tomatoes, halved
  • hot fat for frying
  • sweet oil
  • chopped garlic
  • chopped parsley
  • salt
  • pepper
  • cayenne

Method

  1. 1 Place tomato halves cut-side down in a frying pan with one-half inch of hot fat. Cook until slightly tender.
  2. 2 Carefully transfer tomatoes to a baking dish, placing them side by side.
  3. 3 Drizzle sweet oil around the tomatoes, then sprinkle with chopped garlic, parsley, salt, pepper, and cayenne.
  4. 4 Bake in a hot oven (425°F) for 15 to 20 minutes. Serve directly in the baking dish.
