Baked Fruit Tapioca Pudding

Ingredients

  • 1 cup tapioca
  • 4 cups cold water
  • 1 pinch salt
  • 3/4 cup sugar
  • Fresh or canned fruit, sweetened to taste
  • Sugar for sprinkling
  • Butter for dotting

Method

  1. 1 Soak tapioca overnight in 4 cups cold water with a pinch of salt.
  2. 2 Cook slowly in a double boiler until transparent, adding water if needed.
  3. 3 Layer tapioca and fruit in a buttered baking dish, ending with tapioca.
  4. 4 Sprinkle with sugar and dot with butter.
  5. 5 Bake for 1 hour. Serve hot or cold with cream.
