Baked Fruit Tapioca Pudding
Ingredients
- 1 cup tapioca
- 4 cups cold water
- 1 pinch salt
- 3/4 cup sugar
- Fresh or canned fruit, sweetened to taste
- Sugar for sprinkling
- Butter for dotting
Method
- 1 Soak tapioca overnight in 4 cups cold water with a pinch of salt.
- 2 Cook slowly in a double boiler until transparent, adding water if needed.
- 3 Layer tapioca and fruit in a buttered baking dish, ending with tapioca.
- 4 Sprinkle with sugar and dot with butter.
- 5 Bake for 1 hour. Serve hot or cold with cream.
