Baked Fruit Pudding With Milk Batter
Ingredients
- 2 quarts milk
- 1 pound flour
- 4 eggs
- 8 ounces sugar
- 1 quart fruit (plums, gooseberries, or currants)
- 1 ounce butter
- 1 pinch salt
Method
- 1 In a large bowl, whisk together flour, eggs, sugar, salt, and 1 pint of milk until completely smooth.
- 2 Stir in the remaining 1 pint of milk and mix thoroughly to form a consistent batter.
- 3 Grease a large pie dish with the butter and pour in the batter.
- 4 Arrange the fruit evenly over the batter.
- 5 Bake for 1 hour and 15 minutes, or until the pudding is set and golden brown.
