Baked Fish And Vegetables
Ingredients
- 4 4-ounce white fish fillets (cod or perch)
- 2 cups mixed frozen vegetables
- 1 small onion, diced
- 1 teaspoon lemon juice
- 1 tablespoon parsley flakes
- Aluminum foil (10x12 inch squares)
Method
- 1 Preheat oven to 450°F.
- 2 Place fish fillets in the center of aluminum foil squares.
- 3 Mix frozen vegetables and diced onion; spoon around the fillets.
- 4 Sprinkle with lemon juice and parsley, then fold foil into a leak-proof seal.
- 5 Bake for 10 minutes and serve.
