Baked Fish And Breadcrumbs
Ingredients
- 2 cups breadcrumbs
- 2 cups fish
- 2 tablespoons chopped parsley
- 2 tablespoons fat
- ½ cup flour
- 1/8 teaspoon pepper
- 2 teaspoons onion juice
- 1½ cups milk
- 1 teaspoon salt
- 2 tablespoons fat
Method
- 1 Melt 2 tablespoons fat in a saucepan. Whisk in flour, pepper, and salt to form a roux.
- 2 Gradually whisk in milk and onion juice until smooth. Stir in parsley and lemon juice.
- 3 Add the fish to the sauce and mix gently to coat. Transfer to a greased baking dish.
- 4 Mix breadcrumbs with 2 tablespoons melted fat and sprinkle over the top.
- 5 Bake in a moderate oven (350°F) for 25 minutes until bubbly and golden.
