Ingredients

  • 2 cups breadcrumbs
  • 2 cups fish
  • 2 tablespoons chopped parsley
  • 2 tablespoons fat
  • ½ cup flour
  • 1/8 teaspoon pepper
  • 2 teaspoons onion juice
  • 1½ cups milk
  • 1 teaspoon salt
  • 2 tablespoons fat

Method

  1. 1 Melt 2 tablespoons fat in a saucepan. Whisk in flour, pepper, and salt to form a roux.
  2. 2 Gradually whisk in milk and onion juice until smooth. Stir in parsley and lemon juice.
  3. 3 Add the fish to the sauce and mix gently to coat. Transfer to a greased baking dish.
  4. 4 Mix breadcrumbs with 2 tablespoons melted fat and sprinkle over the top.
