Baked Fig And Nut Meringue Crackers
Ingredients
- 7/8 cup sugar
- 3 tablespoons water
- 1 egg white, unbeaten
- 1 tablespoon marshmallow cream
- ¼ teaspoon vanilla
- 1/3 cup figs, cut into small pieces
- 1/3 cup nut meats, cut into small pieces
- Small round crackers, for serving
Method
- 1 Combine sugar and water in a double boiler. Stir until mostly dissolved, then brush down sides with cold water to remove crystals.
- 2 Add unbeaten egg white. Cook over hot water, beating constantly for 7-12 minutes until the mixture holds its shape.
- 3 Fold in marshmallow cream and vanilla until stiff again.
- 4 Gently fold in the chopped figs and nut meats.
- 5 Pile the mixture onto small round crackers and bake at 375°F for 10 minutes, or until delicately browned.
