Baked Fig And Nut Meringue Crackers

Ingredients

  • 7/8 cup sugar
  • 3 tablespoons water
  • 1 egg white, unbeaten
  • 1 tablespoon marshmallow cream
  • ¼ teaspoon vanilla
  • 1/3 cup figs, cut into small pieces
  • 1/3 cup nut meats, cut into small pieces
  • Small round crackers, for serving

Method

  1. 1 Combine sugar and water in a double boiler. Stir until mostly dissolved, then brush down sides with cold water to remove crystals.
  2. 2 Add unbeaten egg white. Cook over hot water, beating constantly for 7-12 minutes until the mixture holds its shape.
  3. 3 Fold in marshmallow cream and vanilla until stiff again.
  4. 4 Gently fold in the chopped figs and nut meats.
  5. 5 Pile the mixture onto small round crackers and bake at 375°F for 10 minutes, or until delicately browned.
