Baked English Scones

Ingredients

  • 4 cups sifted flour
  • 2 tablespoons baking powder
  • 2 level tablespoons sugar
  • 1/2 teaspoon salt
  • 5 level tablespoons shortening
  • 1 egg
  • 1 1/4 cups milk

Method

  1. 1 In a mixing bowl, combine flour, baking powder, sugar, and salt. Rub in shortening until mixture resembles coarse crumbs.
  2. 2 Beat 1 egg. Mix half of the beaten egg with 1 1/4 cups milk. Add to dry ingredients and stir until a soft dough forms.
  3. 3 Turn dough onto a lightly floured surface and knead for 3 minutes. Divide into 5 equal pieces.
  4. 4 Shape each piece into a saucer-like round. Cut each round into 4 wedges. Place on a greased baking sheet.
  5. 5 Brush scones with remaining beaten egg. Bake in a hot oven (425°F) for 15 minutes.
