Baked Eggs With Herbed Bread Crumbs

Ingredients

  • 6 paper cases
  • butter for greasing
  • 4 tablespoons bread crumbs
  • 2 teaspoons finely chopped parsley
  • salt and pepper to taste
  • 1 boiled onion, finely chopped (optional)
  • 6 eggs

Method

  1. 1 Preheat oven to 425°F. Butter six paper cases.
  2. 2 Mix bread crumbs, parsley, chopped onion (if using), salt, and pepper.
  3. 3 Place a small amount of the crumb mixture at the bottom of each case.
  4. 4 Gently crack one egg into each case, then top with remaining crumbs.
  5. 5 Bake for 10-12 minutes until eggs are set.
