Baked Eggs With Herbed Bread Crumbs
Ingredients
- 6 paper cases
- butter for greasing
- 4 tablespoons bread crumbs
- 2 teaspoons finely chopped parsley
- salt and pepper to taste
- 1 boiled onion, finely chopped (optional)
- 6 eggs
Method
- 1 Preheat oven to 425°F. Butter six paper cases.
- 2 Mix bread crumbs, parsley, chopped onion (if using), salt, and pepper.
- 3 Place a small amount of the crumb mixture at the bottom of each case.
- 4 Gently crack one egg into each case, then top with remaining crumbs.
- 5 Bake for 10-12 minutes until eggs are set.
