Baked Eggs With Creamy Parsley Sauce
Ingredients
- 4 oz butter
- 1 tbsp flour
- chopped parsley
- 1 small onion, chopped
- salt and pepper to taste
- grated nutmeg
- ¼ cup cream
- grated bread for topping
Method
- 1 Rub flour into butter in a saucepan. Add chopped parsley, onion, salt, pepper, and nutmeg.
- 2 Stir over heat until it begins to boil, then add cream and stir until thickened.
- 3 Pour the sauce over cooked eggs in a baking dish. Top with grated bread.
- 4 Broil or bake in a hot oven until the topping is light brown and crispy.
