Baked Eggs With Creamy Parsley Sauce

Ingredients

  • 4 oz butter
  • 1 tbsp flour
  • chopped parsley
  • 1 small onion, chopped
  • salt and pepper to taste
  • grated nutmeg
  • ¼ cup cream
  • grated bread for topping

Method

  1. 1 Rub flour into butter in a saucepan. Add chopped parsley, onion, salt, pepper, and nutmeg.
  2. 2 Stir over heat until it begins to boil, then add cream and stir until thickened.
  3. 3 Pour the sauce over cooked eggs in a baking dish. Top with grated bread.
  4. 4 Broil or bake in a hot oven until the topping is light brown and crispy.
