Baked Eggs With Caramelized Onions
Ingredients
- 4 eggs
- 1 Spanish onion
- 1 oz butter
- 1 tsp vinegar
- 2 tbsp breadcrumbs
- Salt and pepper to taste
- Extra butter for topping
Method
- 1 Peel and slice the onion. Fry it in 1 oz butter until brown.
- 2 Stir in vinegar and season with salt and pepper. Remove from heat.
- 3 Spread the onion mixture onto a buttered baking dish.
- 4 Break eggs over the onions, season with salt and pepper, and sprinkle with breadcrumbs.
- 5 Dot with small bits of butter and bake until eggs are set, about 5-10 minutes.
