Baked Eggs With Asparagus Tips
Ingredients
- Asparagus tips (green parts, pea-sized)
- Butter
- Small bunch of parsley
- Young onions
- Flour
- Water
- Salt
- Pepper
- Sugar
- Eggs
- Nutmeg
Method
- 1 Cut asparagus tips to pea size and scald in hot water for a few minutes.
- 2 Simmer tips in butter with parsley and tied young onions. Add flour, water, salt, pepper, and sugar; stew until liquid evaporates.
- 3 Transfer mixture to a baking dish. Remove herb bundle. Break eggs over the top.
- 4 Season eggs with salt, pepper, and nutmeg. Bake in a moderate oven (350°F) until eggs are just set but not hard.
- 5 Serve immediately.
