  • Butter
  • Small bunch of parsley
  • Young onions
  • Flour

Method

  1. 1 Cut asparagus tips to pea size and scald in hot water for a few minutes.
  2. 2 Simmer tips in butter with parsley and tied young onions. Add flour, water, salt, pepper, and sugar; stew until liquid evaporates.
  3. 3 Transfer mixture to a baking dish. Remove herb bundle. Break eggs over the top.
  4. 4 Season eggs with salt, pepper, and nutmeg. Bake in a moderate oven (350°F) until eggs are just set but not hard.
