Baked Eggs Over Mushrooms

Ingredients

  • 1 lb fresh mushrooms, cleaned and dried
  • 2 oz butter
  • ½ tsp salt
  • dash white pepper
  • 6 eggs
  • stale bread crumbs
  • additional butter for dotting
  • additional salt and pepper
  • buttered toast for serving

Method

  1. 1 Clean mushrooms, wipe dry, and place in a saucepan with 2 oz butter, ½ tsp salt, and a dash of white pepper.
  2. 2 Heat over medium until thoroughly hot, then transfer to a shallow baking dish.
  3. 3 Break six eggs over the mushrooms. Sprinkle with stale bread crumbs, dot with butter, and season with salt and pepper.
  4. 4 Bake in a hot oven (425°F) until eggs are set.
  5. 5 Serve immediately on buttered toast.
