Baked Eggs Over Mushrooms
Ingredients
- 1 lb fresh mushrooms, cleaned and dried
- 2 oz butter
- ½ tsp salt
- dash white pepper
- 6 eggs
- stale bread crumbs
- additional butter for dotting
- additional salt and pepper
- buttered toast for serving
Method
- 1 Clean mushrooms, wipe dry, and place in a saucepan with 2 oz butter, ½ tsp salt, and a dash of white pepper.
- 2 Heat over medium until thoroughly hot, then transfer to a shallow baking dish.
- 3 Break six eggs over the mushrooms. Sprinkle with stale bread crumbs, dot with butter, and season with salt and pepper.
- 4 Bake in a hot oven (425°F) until eggs are set.
- 5 Serve immediately on buttered toast.
