Baked Eggs On Toast With Tomato
Ingredients
- 4 thick slices unpeeled tomato
- 4 large eggs
- Salt and pepper to taste
- 4 small pats butter
- 4 small rounds toast
- Fresh parsley for garnish
Method
- 1 Preheat oven to 350°F. Grease a 4-cup muffin tin.
- 2 Place one thick slice of unpeeled tomato into each muffin cup.
- 3 Season tomatoes with salt and pepper, then crack one egg onto each slice.
- 4 Season eggs with salt and pepper, then top each with a small pat of butter.
- 5 Bake until eggs are set but not hard, about 15-20 minutes.
- 6 Serve each egg and tomato on a small round of toast, garnished with parsley.
