Baked Eggs On Toast With Tomato

Ingredients

  • 4 thick slices unpeeled tomato
  • 4 large eggs
  • Salt and pepper to taste
  • 4 small pats butter
  • 4 small rounds toast
  • Fresh parsley for garnish

Method

  1. 1 Preheat oven to 350°F. Grease a 4-cup muffin tin.
  2. 2 Place one thick slice of unpeeled tomato into each muffin cup.
  3. 3 Season tomatoes with salt and pepper, then crack one egg onto each slice.
  4. 4 Season eggs with salt and pepper, then top each with a small pat of butter.
  5. 5 Bake until eggs are set but not hard, about 15-20 minutes.
  6. 6 Serve each egg and tomato on a small round of toast, garnished with parsley.
