Ingredients

  • small ripe tomatoes
  • salt
  • seasoned bread crumbs
  • fresh eggs
  • pepper

Method

  1. 1 Cut a slice from the blossom end of a tomato and scoop out the pulp with a spoon.
  2. 2 Sprinkle the inside with salt and drain upside down for a few moments.
  3. 3 Place seasoned bread crumbs in the bottom, then break a fresh egg into the tomato.
  4. 4 Season with salt and pepper, then bake in a hot oven (425°F) until the egg is set.
