Baked Eggs In Tomatoes
Ingredients
- small ripe tomatoes
- salt
- seasoned bread crumbs
- fresh eggs
- pepper
Method
- 1 Cut a slice from the blossom end of a tomato and scoop out the pulp with a spoon.
- 2 Sprinkle the inside with salt and drain upside down for a few moments.
- 3 Place seasoned bread crumbs in the bottom, then break a fresh egg into the tomato.
- 4 Season with salt and pepper, then bake in a hot oven (425°F) until the egg is set.
