Baked Eggs In Tomato Sauce

Ingredients

  • 1 ½ cups stewing tomatoes
  • 1 grated onion
  • 1 tablespoon finely minced parsley
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • 3 tablespoons cornstarch
  • 4 eggs
  • fine breadcrumbs
  • butter

Method

  1. 1 Dissolve cornstarch, salt, and paprika in the cold tomatoes.
  2. 2 Bring the mixture to a boil and cook for 10 minutes.
  3. 3 Pour the hot tomato mixture into 4 custard cups.
  4. 4 Break one egg into each cup and sprinkle with fine breadcrumbs.
  5. 5 Place a small pat of butter in the center of each cup.
  6. 6 Bake in a moderate oven (350°F) for 18 minutes.
