  • 8 oz lean boiled ham, minced
  • 8 oz cracker crumbs
  • 4 large eggs
  • Salt and cayenne pepper, to taste
  • Butter, for seasoning

Method

  1. 1 Preheat oven to 350°F. Mix minced ham and cracker crumbs.
  2. 2 Moisten the mixture slightly and spread it over a platter.
  3. 3 Scoop out four round holes, each large enough for an egg.
  4. 4 Drop one egg into each hole and season with salt, cayenne, and butter.
