Baked Eggplant Pizzas With Garlic Yogurt

  • 1 medium eggplant
  • 1/2 cup low-sodium pizza sauce
  • 1 cup low-fat plain yogurt
  • 1 garlic clove, finely chopped
  • vegetable oil spray

Method

  1. 1 Preheat oven to 350°F. Wash and slice the eggplant into 1/2-inch rounds.
  2. 2 Spray a baking pan with oil spray. Arrange eggplant slices in a single layer.
  3. 3 Spoon pizza sauce onto each eggplant slice.
  4. 4 Bake for 30 minutes until tender.
