Baked Eggplant Pizzas With Garlic Yogurt
Ingredients
- 1 medium eggplant
- 1/2 cup low-sodium pizza sauce
- 1 cup low-fat plain yogurt
- 1 garlic clove, finely chopped
- vegetable oil spray
Method
- 1 Preheat oven to 350°F. Wash and slice the eggplant into 1/2-inch rounds.
- 2 Spray a baking pan with oil spray. Arrange eggplant slices in a single layer.
- 3 Spoon pizza sauce onto each eggplant slice.
- 4 Bake for 30 minutes until tender.
- 5 Mix yogurt and chopped garlic. Drizzle over hot eggplant and serve immediately.
