Baked Eggplant Parmesan

Ingredients

  • 2 eggplants
  • Salt and pepper, to taste
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • ½ cup stock
  • Cayenne pepper, to taste
  • Grated cheese
  • Breadcrumbs
  • Butter, for dotting

Method

  1. 1 Cover eggplants with boiling water for 10 minutes. Drain, peel, slice thin, cut into quarters, and season with salt and pepper.
  2. 2 Fry the eggplant slices until cooked.
  3. 3 Melt butter and flour together, then stir in milk and stock. Cook until smooth and thick, seasoning with salt and cayenne.
  4. 4 Layer fried eggplant and cheese in a buttered baking dish, covering each layer with sauce. Top with cheese, breadcrumbs, and dots of butter.
  5. 5 Bake for 20 minutes.
