Baked Eggplant Parmesan
Ingredients
- 2 eggplants
- Salt and pepper, to taste
- 1 tbsp butter
- 1 tbsp flour
- 1 cup milk
- ½ cup stock
- Cayenne pepper, to taste
- Grated cheese
- Breadcrumbs
- Butter, for dotting
Method
- 1 Cover eggplants with boiling water for 10 minutes. Drain, peel, slice thin, cut into quarters, and season with salt and pepper.
- 2 Fry the eggplant slices until cooked.
- 3 Melt butter and flour together, then stir in milk and stock. Cook until smooth and thick, seasoning with salt and cayenne.
- 4 Layer fried eggplant and cheese in a buttered baking dish, covering each layer with sauce. Top with cheese, breadcrumbs, and dots of butter.
- 5 Bake for 20 minutes.
