Ingredients

  • 1 large eggplant
  • butter
  • pepper
  • salt
  • 2 hard-boiled eggs, chopped
  • 1/2 onion, grated
  • 2 tablespoons bread crumbs

Method

  1. 1 Boil the eggplant until tender, then peel and mash it.
  2. 2 Season the mashed eggplant with butter, pepper, and salt. Stir in the chopped hard-boiled eggs and grated onion.
  3. 3 Add 2 tablespoons of bread crumbs to the mixture and transfer to a buttered baking dish.
  4. 4 Cover the top with additional bread crumbs and dot with butter. Bake until browned.
