Baked Eggplant And Egg Casserole
Ingredients
- 1 large eggplant
- butter
- pepper
- salt
- 2 hard-boiled eggs, chopped
- 1/2 onion, grated
- 2 tablespoons bread crumbs
Method
- 1 Boil the eggplant until tender, then peel and mash it.
- 2 Season the mashed eggplant with butter, pepper, and salt. Stir in the chopped hard-boiled eggs and grated onion.
- 3 Add 2 tablespoons of bread crumbs to the mixture and transfer to a buttered baking dish.
- 4 Cover the top with additional bread crumbs and dot with butter. Bake until browned.
