Baked Egg White Tea Cakes

Ingredients

  • 3 cups flour
  • 1 tsp salt
  • 3 egg yolks
  • 1 pt milk
  • 3 egg whites

Method

  1. 1 Sift together flour and salt.
  2. 2 Beat egg yolks until light, add milk, and stir into dry ingredients.
  3. 3 Beat egg whites until stiff and dry.
  4. 4 Fold beaten whites into batter.
  5. 5 Pour into small buttered tins and bake in a very hot oven (425°F).
