Baked Egg Stuffed Tomatoes

Ingredients

  • 4 tomatoes
  • 2 eggs
  • 2 tablespoons milk
  • 1 teaspoon grated onion
  • 1 teaspoon finely minced parsley
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • fine bread crumbs

Method

  1. 1 Cut a slice from the top of each tomato and scoop out the center with a spoon.
  2. 2 In a bowl, beat eggs with milk, grated onion, parsley, salt, and paprika until mixed.
  3. 3 Pour the egg mixture into the prepared tomatoes.
  4. 4 Sprinkle each tomato with fine bread crumbs.
  5. 5 Bake in a moderate oven (350°F) for 30 minutes.
