Baked Egg Stuffed Tomatoes
Ingredients
- 4 tomatoes
- 2 eggs
- 2 tablespoons milk
- 1 teaspoon grated onion
- 1 teaspoon finely minced parsley
- 1 teaspoon salt
- 1/2 teaspoon paprika
- fine bread crumbs
Method
- 1 Cut a slice from the top of each tomato and scoop out the center with a spoon.
- 2 In a bowl, beat eggs with milk, grated onion, parsley, salt, and paprika until mixed.
- 3 Pour the egg mixture into the prepared tomatoes.
- 4 Sprinkle each tomato with fine bread crumbs.
- 5 Bake in a moderate oven (350°F) for 30 minutes.
