Baked Dried Fruit Pudding With Nuts
Ingredients
- 1 cup dried apricots, peaches, or prunes
- 2 cups water
- 1 cup bread crumbs
- 2/3 cup corn syrup
- 1 teaspoon orange or lemon rind
- 2 eggs
- 1/8 teaspoon salt
- 1 teaspoon lemon juice
- 1/2 cup chopped nuts
Method
- 1 Soak dried fruit in water for two hours.
- 2 Mix soaked fruit with bread crumbs, corn syrup, rind, eggs, salt, lemon juice, and nuts.
- 3 Place mixture in a greased baking dish.
- 4 Bake for 30 minutes in a moderately hot oven (425°F).
