Baked Dried Fruit Pudding With Nuts

Ingredients

  • 1 cup dried apricots, peaches, or prunes
  • 2 cups water
  • 1 cup bread crumbs
  • 2/3 cup corn syrup
  • 1 teaspoon orange or lemon rind
  • 2 eggs
  • 1/8 teaspoon salt
  • 1 teaspoon lemon juice
  • 1/2 cup chopped nuts

Method

  1. 1 Soak dried fruit in water for two hours.
  2. 2 Mix soaked fruit with bread crumbs, corn syrup, rind, eggs, salt, lemon juice, and nuts.
  3. 3 Place mixture in a greased baking dish.
  4. 4 Bake for 30 minutes in a moderately hot oven (425°F).
