Baked Dill Cottage Cheese Stuffed Potatoes

Ingredients

  • 3/4 cup cottage cheese (low-fat)
  • 2 tablespoons milk (low-fat 1%)
  • 1 teaspoon margarine (soft tub)
  • 3/4 teaspoon dill weed
  • 1/4 teaspoon herb seasoning
  • 2 tablespoons hot pepper sauce (or 4 dashes)
  • 4 medium baking potatoes
  • 1/4 teaspoon Parmesan cheese

Method

  1. 1 Prick potatoes with a fork and bake at 425°F for 60 minutes, or until fork-tender.
  2. 2 Cut potatoes in half lengthwise and scoop out pulp, leaving a 1/2-inch border in the shells.
  3. 3 Mash the potato pulp in a large bowl and mix in cottage cheese, milk, margarine, dill, herb seasoning, and hot pepper sauce.
  4. 4 Spoon the mixture back into the potato shells and sprinkle with Parmesan cheese.
  5. 5 Bake for 15 to 20 minutes until the tops are golden brown.
