Baked Creamed Oysters With Bread Crumbs
Ingredients
- 2 dozen oysters
- 1 oz butter
- 1 oz flour
- 0.5
- 2 tbsp cream
- A few drops lemon juice
- Salt and pepper
- Bread crumbs
- Cayenne pepper
- Parsley for garnish
- Lemon slices for garnish
Method
- 1 Beard the oysters and cut them in half.
- 2 Strain the oyster liquor through muslin.
- 3 Simmer the oyster beards in the milk.
- 4 Melt butter in a stewpan and mix in flour smoothly.
- 5 Strain the milk into the butter-flour mixture, add oyster liquor, and cook well.
- 6 Add cream and let it boil in the sauce.
- 7 Add lemon juice, salt, pepper, cayenne, and oysters.
- 8 Grease scallop shells and sprinkle with bread crumbs.
- 9 Fill shells with the mixture and sprinkle more crumbs on top.
- 10 Brown in a quick oven (425°F).
- 11 Serve on a folded napkin, garnished with parsley and cut lemon.
