Baked Creamed Oysters With Bread Crumbs

Ingredients

  • 2 dozen oysters
  • 1 oz butter
  • 1 oz flour
  • 0.5
  • 2 tbsp cream
  • A few drops lemon juice
  • Salt and pepper
  • Bread crumbs
  • Cayenne pepper
  • Parsley for garnish
  • Lemon slices for garnish

Method

  1. 1 Beard the oysters and cut them in half.
  2. 2 Strain the oyster liquor through muslin.
  3. 3 Simmer the oyster beards in the milk.
  4. 4 Melt butter in a stewpan and mix in flour smoothly.
  5. 5 Strain the milk into the butter-flour mixture, add oyster liquor, and cook well.
  6. 6 Add cream and let it boil in the sauce.
  7. 7 Add lemon juice, salt, pepper, cayenne, and oysters.
  8. 8 Grease scallop shells and sprinkle with bread crumbs.
  9. 9 Fill shells with the mixture and sprinkle more crumbs on top.
  10. 10 Brown in a quick oven (425°F).
  11. 11 Serve on a folded napkin, garnished with parsley and cut lemon.
