Baked Crab And Cheese Canapes
Ingredients
- 2 tablespoons butter, divided
- 1 slice onion, chopped fine
- 2 tablespoons flour, divided
- 1 cup stock
- 1 cup crab meat, cooked
- 1 tablespoon milk
- 2½ tablespoons grated Parmesan cheese
- 2½ tablespoons Swiss cheese
- Salt, pepper, and cayenne to taste
- 6 slices or circles of buttered toast or fried bread
- Watercress for garnish
Method
- 1 Melt 1 tablespoon butter in a saucepan. Fry chopped onion until soft but not brown. Stir in 1 tablespoon flour and cook briefly without browning.
- 2 Slowly add stock, stirring until smooth. Add crab meat, season with salt, pepper, and cayenne, and simmer for 6-8 minutes.
- 3 In a separate saucepan, melt remaining 1 tablespoon butter. Stir in remaining 1 tablespoon flour. Add milk and stir in cheeses until softened. Cool.
- 4 Form the cheese mixture into 6 balls. Place a layer of crab mixture on each toast slice, then top with a cheese ball.
- 5 Bake in a hot oven (425°F) for 5 minutes. Serve with watercress.
