Baked Cornmeal Spoonbread

Ingredients

  • 2 eggs
  • 1 pint sour milk
  • 1 pint fine cornmeal
  • 1 tablespoon melted butter
  • 1 teaspoon baking soda
  • small amount of milk for dissolving soda

Method

  1. 1 Beat two eggs until very light.
  2. 2 Mix the eggs alternately with 1 pint of sour milk and 1 pint of fine cornmeal.
  3. 3 Add 1 tablespoon of melted butter.
  4. 4 Dissolve 1 teaspoon of baking soda in a little milk and stir it in last.
  5. 5 Beat the batter very hard, pour into a deep pan, and bake in a hot oven (425°F).
