Baked Cornmeal Spoonbread
Ingredients
- 2 eggs
- 1 pint sour milk
- 1 pint fine cornmeal
- 1 tablespoon melted butter
- 1 teaspoon baking soda
- small amount of milk for dissolving soda
Method
- 1 Beat two eggs until very light.
- 2 Mix the eggs alternately with 1 pint of sour milk and 1 pint of fine cornmeal.
- 3 Add 1 tablespoon of melted butter.
- 4 Dissolve 1 teaspoon of baking soda in a little milk and stir it in last.
- 5 Beat the batter very hard, pour into a deep pan, and bake in a hot oven (425°F).
