Baked Cornmeal Spoon Bread With Bacon Fat

Ingredients

  • 1 cup white cornmeal
  • 2 cups boiling water
  • ½ cup bacon fat or drippings
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 slice bread
  • ½ cup cold water
  • 1 cup milk

Method

  1. 1 Scald cornmeal with boiling water.
  2. 2 Soak bread in cold water and milk.
  3. 3 Separate yolks and whites of eggs. Beat each until light.
  4. 4 Mix ingredients in order given, folding in whites of eggs last.
  5. 5 Bake in buttered dish in hot oven (425°F) for 50 minutes.
