Baked Cornmeal Custard

Ingredients

  • 2 cups milk
  • 1 tablespoon butter
  • ½ cup cream
  • ½ cup white cornmeal
  • Salt to taste
  • 4 eggs, well beaten

Method

  1. 1 Combine milk and cream in a double boiler. Heat until boiling, then season with salt.
  2. 2 While stirring constantly, sift in the cornmeal. Boil for 5 minutes, stirring continuously.
  3. 3 Remove from heat and stir in the butter and beaten eggs.
  4. 4 Pour into a greased baking dish and bake in a 425°F oven until browned like a custard.
  5. 5 Serve hot with butter.
