Baked Cornmeal Custard
Ingredients
- 2 cups milk
- 1 tablespoon butter
- ½ cup cream
- ½ cup white cornmeal
- Salt to taste
- 4 eggs, well beaten
Method
- 1 Combine milk and cream in a double boiler. Heat until boiling, then season with salt.
- 2 While stirring constantly, sift in the cornmeal. Boil for 5 minutes, stirring continuously.
- 3 Remove from heat and stir in the butter and beaten eggs.
- 4 Pour into a greased baking dish and bake in a 425°F oven until browned like a custard.
- 5 Serve hot with butter.
