Baked Cornflake Chicken With Ranch Sauce
Ingredients
- 1 teaspoon hot pepper sauce
- 2 teaspoons fresh lemon juice
- 4 tablespoons olive oil
- 4 boneless skinless chicken breasts
- 1/4 cup cornflake crumbs
- 1/4 cup light sour cream
- 1/2 teaspoon buttermilk
- 1/4 teaspoon garlic powder
- dried dillweed
Method
- 1 Whisk hot pepper sauce, lemon juice, and olive oil in a shallow bowl.
- 2 Add chicken to coat, cover, and refrigerate 30 minutes to 8 hours. Discard marinade.
- 3 Preheat oven to 375°F. Spray an 8-inch square baking pan with oil spray.
- 4 Coat chicken in cornflake crumbs and transfer to the prepared baking pan.
- 5 Spray chicken with oil spray. Bake 30 minutes until internal temp reaches 165°F.
- 6 Whisk sour cream, buttermilk, garlic powder, and dillweed. Serve sauce with chicken.
