Baked Cornflake Chicken With Ranch Sauce

  • 1 teaspoon hot pepper sauce
  • 2 teaspoons fresh lemon juice
  • 4 tablespoons olive oil
  • 4 boneless skinless chicken breasts
  • 1/4 cup cornflake crumbs
  • 1/4 cup light sour cream
  • 1/2 teaspoon buttermilk
  • 1/4 teaspoon garlic powder
  • dried dillweed

Method

  1. 1 Whisk hot pepper sauce, lemon juice, and olive oil in a shallow bowl.
  2. 2 Add chicken to coat, cover, and refrigerate 30 minutes to 8 hours. Discard marinade.
  3. 3 Preheat oven to 375°F. Spray an 8-inch square baking pan with oil spray.
  4. 4 Coat chicken in cornflake crumbs and transfer to the prepared baking pan.
  5. 5 Spray chicken with oil spray. Bake 30 minutes until internal temp reaches 165°F.
  6. 6 Whisk sour cream, buttermilk, garlic powder, and dillweed. Serve sauce with chicken.
