Baked Corn Flake Crusted Fish

Ingredients

  • 2 pounds fish fillets
  • 1 tablespoon fresh lemon juice
  • 1/4 cup 1% buttermilk
  • 1 teaspoon fresh minced garlic
  • 2 teaspoons hot sauce
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/2 cup corn flakes (crumbled) or regular bread crumbs
  • 1 tablespoon vegetable oil
  • 1 fresh lemon, cut into wedges

Method

  1. 1 Preheat oven to 475°F. Lightly oil a shallow baking dish.
  2. 2 Rinse fish fillets, wipe with lemon juice, and pat dry.
  3. 3 In a bowl, combine buttermilk, hot sauce, and minced garlic.
  4. 4 In a separate shallow dish, mix corn flakes (or breadcrumbs) with white pepper, salt, and onion powder.
  5. 5 Dip fillets into the buttermilk mixture, then coat thoroughly with the seasoned crumbs. Press gently to adhere.
