Baked Corn Flake Crusted Fish
Ingredients
- 2 pounds fish fillets
- 1 tablespoon fresh lemon juice
- 1/4 cup 1% buttermilk
- 1 teaspoon fresh minced garlic
- 2 teaspoons hot sauce
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon salt
- 1/4 teaspoon onion powder
- 1/2 cup corn flakes (crumbled) or regular bread crumbs
- 1 tablespoon vegetable oil
- 1 fresh lemon, cut into wedges
Method
- 1 Preheat oven to 475°F. Lightly oil a shallow baking dish.
- 2 Rinse fish fillets, wipe with lemon juice, and pat dry.
- 3 In a bowl, combine buttermilk, hot sauce, and minced garlic.
- 4 In a separate shallow dish, mix corn flakes (or breadcrumbs) with white pepper, salt, and onion powder.
- 5 Dip fillets into the buttermilk mixture, then coat thoroughly with the seasoned crumbs. Press gently to adhere.
- 6 Arrange fillets on the prepared baking dish. Bake on the middle rack for 20 minutes without turning.
- 7 Cut into 6 pieces and serve immediately with fresh lemon wedges.
